Noughty Rosé - Alcohol-free
The grapes for the Noughty De-alcoholised Rosé are harvested from vineyards on dry land in the Western Cape region, where the vines are not trained and are planted as bushes. The vineyards are strategically planted on slopes facing south-west to catch cool breezes from the Atlantic Ocean and the cold Benguela current. Deep soils of decomposed granite, rich in clay, with good drainage.
After a 14-day fermentation at 14-15°C, the grapes and juice are treated reductively to prevent oxidation and retain fruitiness. The wine remains on lees for 2 months to add complexity. The wine is then de-alcoholised using gently rotating cone technology. This is done under vacuum and at low temperature to ensure the wine retains its characteristic body, colour and flavour.
This rosé has a Provence style with ripe summer berries, fresh and peachy aromas and a balanced finish.
